Spinach and bacon quiche

I had this bunch of spinach lying around in the fridge begging for attention. Spinach is not one of those vegetables that lasts forever and if you have made the mistake of purchasing it, you will have no choice but to cook it quickly. I had thought of several things that I could do with this spinach but I finally decided on baking a quiche. You may ask why a quiche?

Well if you have a pastry lined tart shell prepared then its a fairly easy dish to assemble. So I have always cooked a quiche in two stages. The first stage is where I prepare the pastry dough and freeze the lined tart shell and the other stage is where I prepare the filling and the eggs. Freezing the pastry dough sort of helps because one it does not rise so much when you bake it and the second I believe the comes out easier from the shell. Over all I have always loved this particular quiche. The combination of spinach and bacon is excellent and although you can pretty much put whatever you want I think this may just be the best quiche filling that was ever invented!

I am not a big fan of dairy except for yogurt but I have added some milk to the eggs. Some people add cream but I would not really recommend that. Anyway I am quite happy with the results and the rest is for you all to see above!

    Wow I never knew quiches are so big! I loveee quiches (strictly non-veg fillings of course) but the ones I have are always small… cup size. Since those weren’t called mini-quiches, I just thought all quiches were supposed to be that small. This is nice :)

    @ Khelljuhg : Thank you! I think you could try a spinach quiche. In Japan of course there is a possibility of many other interesting ‘greens’ as well.

    @ Kima : Welcome kima. Quiches that you have been eating till now must have been mini-quiches. I think in India they sort of like do that in bakeries. At home of course we are not constrained by the size because we cook for ourselves and we do not need to make a profit. He he he. Thank you very much, I appreciate you liked it.
